Avocado Mango Quinoa Salad

Oh goodness, writing about this salad makes me so hungry! I so love avocados and mangos together, and I thought “hmmm why not combine these two fantastic flavors in a wholesome summer salad??” I paired the salad with a simple, refreshing watermelon agua fresca – which only requires 3 ingredients and is full of goodness!

Cooking with the seasons has been a thing I’ve been doing more consciously over the past few years. This type of seasonal cooking has many great benefits, and one of them is easier digestion. When you eat fresh, in season foods you are allowing your system to adapt to the changing of the climate, lifestyle, sun & moon cycles, etc. Plus it’s fun to experiment with new recipes and ingredients!

If you love quinoa “the super grain” you’ll love my Avocado Mango Quinoa Salad! It’s simple and quick … who doesn’t like easy prep? Right now mangos are so delicious and juicy it’s the perfect time to give this salad a try. Of course there are a few other tasty components to this salad like BACON! I think I’ve talked about this bacon before – It’s local, thick cut and fresh. Ymmers!! I also threw in some spinach, cucumbers, cherry tomatoes, and the Honey Vinaigrette from my Spinach Goat Cheese Salad Recipe.

By the way I love feta cheese! I recently found an organic sheep’s milk feta at my local grocery store, and it has a great flavor. Give it a try if you spot it in your area!

Avocado Mango Quinoa Salad

INGREDIENTS

Avocado Mango Quinoa Salad

  • 1 cup cooked organic quinoa
  • 3 – 4 strips cooked organic bacon chopped
  • 2 – 3 cups organic spinach
  • 1 medium organic cucumber chopped
  • 3/4 cup organic cherry tomatoes halved
  • 1 organic mango cubed
  • 1 large organic avocado chopped
  • 3 tbs organic feta cheese (or to taste)
  • sprinkle of sea salt and black pepper

Honey Vinaigrette – You can find my recipe here … 

Watermelon Agua Fresca

  • 3 cups cubed seedless watermelon
  • 2 – 3 tbs organic honey or agave
  • 1 tbs lime juice
  • a few sprigs of mint (optional)

INSTRUCTIONS

 Salad

  1. Cook the quinoa according to directions on package or in a medium saucepan boil 1 cup of raw quinoa in 1 1/2 cups of water. Once boiling reduce heat to simmer for about 10 – 15 mins until the water has evaporated and quinoa is soft. This is how I usually cook quinoa, but please make it to your liking.
  2. In a large bowl combine cooked bacon, spinach, cucumber, cherry tomatoes, mango, avocado, cooked quinoa and feta cheese. Mix until well combined.
  3. Make the honey vinaigrette, and pour about 1/4 cup over salad and mix throughly. Add more vinaigrette to taste.

 Watermelon Agua Fresca

  1. Place watermelon, honey/agave, and lime juice in a blender. Blend until well combined.
  2. Pour over ice, and garnish with mint.
