I love cookies you can eat any time of day especially for breakfast! This is the perfect time of year to get into a healthy morning routine. For me that includes Yoga and a simple breakfast to keep me going until my mid-morning snack, these Oatmeal Cookies are just what I need! I packed them full of raisins, oats, toasted coconut, pecans, dark chocolate and agave nectar.
Yoga and food are my favorite things to “nerd out” on. I could go on and on about how to balance body, mind and spirit through yoga and food, but I believe the most important thing to do is listen to yourself. You know what’s best for you, and you know when you feel balanced – Yoga and food are tools to help you find this awareness within yourself.
I got out early for a chilly morning walk and Yoga after a few Oatmeal Cookies. When I’m feeling low energy or need to warm up I strike a Warrior pose! Warrior I is very empowering, and energizing.
Here’s how to get into it: From standing step back with one leg and place back foot at a 45° angle, bend front knee and align with ankle. Keep hips facing forward, root down through feet and reach fingertips toward the sky. Relax shoulders, neck, and face (smile). Engage inner thighs and core to keep low back strong. Hold each side for 5 – 8 breaths. While breathing, on the inhale think “positive” on the exhale think “negative”. Breathing in positive energy and breathing out negative energy.

Healthy Dark Chocolate Oatmeal Cookies

INGREDIENTS
Healthy Dark Chocolate Oatmeal Cookies
- 1 cup organic rolled oats
- 3/4 cup organic unbleached flour
- 1 1/2 tsp aluminum free baking powder
- 1 tsp cinnamon
- 1 tsp all spice
- 1/4 tsp sea salt
- 2 tbs organic unrefined coconut oil (melted)
- 1 large organic egg
- 1 tsp pure vanilla extract
- 1/2 cup agave nectar
- 1/2 cup organic raisins
- 1/2 cup organic dark chocolate chips
- 1/4 cup organic shredded coconut toasted
- 1/4 cup chopped pecans
INSTRUCTIONS
- Preheat oven to 350° and prepare 2 baking sheets with parchment paper.
- In a medium bowl with a wooden spoon mix oatmeal, flour, baking powder, cinnamon, all spice, salt.
- In a small bowl whisk melted coconut oil, egg, and vanilla until smooth then add in agave nectar.
- Combine wet ingredients with oat mixture until well combined. Fold in raisins, dark chocolate, coconut, and pecans just until incorporated.
- Place spoonfuls of dough onto baking sheets and gently press down with back of spoon.
- Bake 12 – 15mins until cookies are firm.
