Cardamom Cookies & No Bake Almond Butter Cocoa Cookies

Whew time sure does fly this time of year! I’ve been wanting to post some of my favorite holiday cookie recipes … better late than never. Well, it might actually be perfect timing with all of the Christmas Eve baking going on today.


I remember growing up, whether at my grandmas, great grandmas or my moms house, we’d always have Cardamom Cookies on the dessert table. I just love everything about these powdered sugar covered morsels! The flavor of almond mixed with cardamom is so unique and delightful. I wanted to keep the tradition going, and also add my own flare to the mix by browning the butter and using almond pieces.  They are amazing, and a close second to my family recipe!


Another one of my favorite holiday cookies are my moms cocoa, oatmeal no bake cookies! They are so addictive, I could eat the whole batch! This year I tried something a little different with the recipe (not that the original recipe isn’t great) by using coconut oil, coconut sugar and almond butter. They came out so perfectly delicious! These cookies are full of good for you fat and fiber, so it’s okay if you have a few.

Cardamom Cookies & No Bake Almond Butter Cocoa Cookies

  • Servings: About 2 dozen cookies

Cardamom Cookies

  • 1 cup organic unsalted butter (browned)
  • 2 cups organic unbleached flour
  • 1 1/2 cups organic powdered sugar
  • 2 tsp organic cardamom
  • 1/2 tsp almond extract
  • 1/8 tsp salt
  • 1 cup almonds or walnut pieces

No Bake Almond Butter Cocoa Cookies

  • 1/2 cup unrefined coconut oil
  • 2 cups organic coconut sugar
  • 1/2 cup organic whole milk
  • 1/3 cup organic cocoa powder
  • 1/2 cup organic almond butter
  • 3 cups organic oatmeal
  • 1/2 tsp pure vanilla extract


Cardamom Cookies

  1. Preheat oven to 350° and prepare 2 baking sheets with parchment paper.
  2. In a medium sauce pan melt butter, and let boil until butter turns golden brown. About 5 minutes. Remove from heat and let cool.
  3. In a large mixing bowl add cooled butter, flour, 1 cup powdered sugar, cardamom, almond extract, salt, and almond or walnut pieces. Mix until well combined.
  4. Shape dough into small balls and place on baking sheet.
  5. Bake for 15-20mins until firm. Let cool for about 3 minutes then roll cookies in remaining powdered sugar.
  6. Will keep for about a week stored in a plastic container or bag.

No Bake Almond Butter Cocoa Cookies

  1. Prepare two baking sheets with wax paper.
  2. In a medium sauce pan over medium heat melt coconut oil, coconut sugar, milk, and cocoa powder until smooth. Then remove from heat.
  3. Add almond butter, oatmeal, and vanilla to the cocoa mixture. Mix until well combined.
  4. Drop spoonfuls of mixture onto cookie sheets, and place in the refrigerator to cool for at least 3o minutes.
  5. Layer cookies on wax paper in a plastic container and store in refrigerator for up to two weeks (if they last that long.)
